STUFFED CHICKEN WITH MUSHROOMS
(ALA SERENADE)
Ingredients:
· 1 chicken (1300 gr)
· 200 gr mushrooms (canned)
· 1 cup rice
· 3 tablespoons breadcrumbs
· 3 tablespoons Seal of Quality sour cream
· 2 eggs
· 150 gr margarine
· 2 tablespoons seasoning
· 1 teaspoon black pepper
· 1 tablespoon parsley
· oregano
Preparation:
Salt the chicken and add seasoning. Meanwhile prepare
the stuffing.
Heat 50 gr of margarine and fry the mushrooms. At the
end add parsley and stew it for about 20 minutes. Than
add rice (boiled), oregano and eggs and fry it shortly
until the mixture thickens. Finally add breadcrumbs
and sour cream. Stuff the chicken with this and close
it with a thread or toothpicks. Put the chicken in margarine-greased
pan. Put the rest of the margarine over the chicken
cover it with foil and bake it for an hour. Baste the
chicken with the juices from time to time while baking.
Serve it with mashed potatoes and salad.
