POLENTA
Ingredients:
· 3 handfuls corn flour
· water
· 2 tablespoons oil
· salt
· Seal of Quality cheese
· Seal of Quality yogurt
Preparation:
Boil some water in a deep 2 l pan (it could be an earthen
pan). Add salt and 1-2 tablespoons of oil. After the
water comes to a boil, measure the depth of water with
a spoon handle and then add the flour according to that
(three fingers of water = three handfuls of flour)
As the water boils carefully add the flour to the water
and make two to three holes with the wooden spoon. Let
the polenta boil for a longer time on low temperature.
When half of the water has evaporated take the pan from
the stove, stir it well with the wooden spoon and put
some hot oil on it. Finally, with a spoon covered in
hot oil take out the polenta and put it on plates. You
can put some cheese on top of it. Serve it with yogurt.
